Spicy Brinjal Feta Pasta Salad
Description
A quick & easy spicy cold pasta salad as an accompaniment to a main meal or as a salad for a braai or even on its own!
Ingredients
Instructions
- Boil pasta and set aside
- Lightly saute all the veg, green masala, almonds & sesame seeds (except the brinjal) and add to the pasta (veg must be crispy)
- Spice the brinjal with green masala, jeeru & dhana & saute until soft on both sides – then add to the pasta
- Toss all the veg together with some olive oil, taste for salt & black pepper
- Garnish with fresh coriander & serve
Notes
- The brinjals need to be sautéed separately as they take longer to soften.
- You can add more green masala if you prefer a more spicy salad.
- You can serve this as a meal on its own, perfect for Vegetarians or Pescatarians.
- This could also be a side salad at a braai or to a meal of chicken or lamb.
