Orange Infused Butternut Soup

Cooking Method:Boiling, Sautéing Courses:Lunch, Supper Recipe Keys: Vegetarian Pescatarian
Cook time: 30 minutesTotal time: 30 minutesServings:4 servings

Description

Butternut & sweet potato are a great combination for this healthy homemade soup. The orange zest & orange juice give the soup an interesting twist of flavour but definitely make for a heartwarming soup perfect for wintery days.

Ingredients

Instructions

  1. Saute the first 5 ingredients & set aside (use a deep soup pot)
  2. Place the vegetables & apple in a pressure cooker, top with water & cook for 15 minutes until soft
  3. Blend the cooked vegetables until smooth & add them to the sautéed onion
  4. Add in the orange juice & nutmeg & allow to simmer
  5. Remove from heat and stir in 1 cup of yoghurt or cream & add salt and pepper to taste
  6. Garnish with coriander (or herb of choice), chilli flakes (optional) and a swirl of cream.

Notes

  • This is such a simple way of increasing your vegetable intake for the day.
  • Vegetables are a wonderful source of fibre and antioxidants, both of which are needed for a healthy gut.
  • Perfect for picky eaters too! Get them to eat their veg without realising it.
  • For a different taste, you can add in some pumpkin chunks & gem squash (without the shell)
  • You could also omit the orange rind & juice altogether and vary the vegetables as above.
  • It would be best to adjust the chilli taste to your preference.
  • See the separate recipe for green masala.
