Healthy homemade soup in just 30 minutes!
Orange Infused Butternut Soup
Description
Butternut & sweet potato are a great combination for this healthy homemade soup. The orange zest & orange juice give the soup an interesting twist of flavour but definitely make for a heartwarming soup perfect for wintery days.
Ingredients
Instructions
- Saute the first 5 ingredients & set aside (use a deep soup pot)
- Place the vegetables & apple in a pressure cooker, top with water & cook for 15 minutes until soft
- Blend the cooked vegetables until smooth & add them to the sautéed onion
- Add in the orange juice & nutmeg & allow to simmer
- Remove from heat and stir in 1 cup of yoghurt or cream & add salt and pepper to taste
- Garnish with coriander (or herb of choice), chilli flakes (optional) and a swirl of cream.
Notes
- This is such a simple way of increasing your vegetable intake for the day.
- Vegetables are a wonderful source of fibre and antioxidants, both of which are needed for a healthy gut.
- Perfect for picky eaters too! Get them to eat their veg without realising it.
- For a different taste, you can add in some pumpkin chunks & gem squash (without the shell)
- You could also omit the orange rind & juice altogether and vary the vegetables as above.
- It would be best to adjust the chilli taste to your preference.
