Description
This masala is a must when it comes to Indian/spicy cooking. A specified quantity of fresh ginger, garlic & chillies will give you the masala needed for cooking almost every dish.

- Process the garlic & ginger separately in a food processor
- Decant into a large bowl and then add the crushed red chillies to it.
- Mix thoroughly and add some oil for preserving
Notes
- Sift the crushed chillie powder before adding if it has and dried seeds as the seeds can make it quite strong.
- Store in an airtight container in the fridge & the rest can be stored in zip-loc bags in the freezer.
- This masala is very versatile and can be used for curries, dry meat dishes, soups, and even vegetable dishes.
